Finding Joy: Yummy recipe – Lemon Crunch

Recipes that encouraged us to cook, passed on through generations and recreated time after time!

One that often warms my heart and brings back special memories is ‘Lemon Crunch’ – yes kids that one! I have made it probably 100s of times out of a cook book called ‘Pot Luck A Celebrity Cookbook’, given to me by my wonderful Aunt Sara back in 1988 – the beginning of my career as an Army Wife! As you will see from the picture posted, the recipe page is well loved and has been used by many in my family, so much so the page is worn and sticky!

Should anyone want to try it and experience the yumminess of this desert, here is the recipe:-

Lemon Crunch

  • 125g Ginger nut biscuits – crushed
  • 50g butter, melted
  • 125ml double cream
  • 1 x 200g tin condensed milk
  • 2 lemons
  • grated chocolate to garnish

Mix the biscuit crumbs with the melted butter. Use to line a 23cm flan dish and chill in the frigerator. Lightly whip the cream and mix with the condensed milk. Add the grated rind of 1 lemon and the juice of both until you can no longer taste the condensed milk. When all well mixed and really thick, pour into the lined flan dish and return to the refrigerator. Remove 1 hour before serving and decorate with grated chocolate.

Food to me has always been about love! The love of the food, the people around the table we share it with and the warmth and joy it brings as we experience each mouthful. I remember the Sunday lunches at home growing up when we were scattered to the wind… we all tried, where possible, to come home and share the love, stories and catchups with each other – yummy indeed.  Unfortunately I do eat rather quickly, which I attribute to being part of this lovely large family and it was the order of the day to do so, if you wanted second helpings!!
